- 3 cups rolled oats
- 1/2 cup chopped walnuts
- 1/4 cup flaxseed meal
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 2 ripe bananas, mashed
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a large bowl, combine oats, walnuts, and flaxseed meal.
- In a separate bowl, whisk together coconut oil, honey (or maple syrup), mashed banana, cinnamon and nutmeg.
- Pour wet ingredients into dry and stir to combine.
- Spread mixture onto prepared baking sheet.
- Bake for 25-30 minutes or until golden brown.
- Allow to cool completely before storing in an airtight container.
