- 1 pig's head
- 2 pig's feet
- 3 cloves of garlic
- 1 onion
- 3 bay leaves
- 2 tablespoons of black peppercorns
- Remove the brains, eyes and ears from the pig's head.
- Place the pig's head and feet in a large pot and cover with water.
- Add the garlic, onion, bay leaves and peppercorns to the pot.
- Bring to a boil, reduce heat to low and simmer for 2 hours.
- Remove from heat and let cool.
- Remove the meat from the bones and cut into cubes.
- Place in a bowl and mix with salt to taste.
- Transfer to a container or serving dish.
- Chill for at least 3 hours before serving.
