Headcheese
Ingredients
  • 1 pig's head
  • 2 pig's feet
  • 3 cloves of garlic
  • 1 onion
  • 3 bay leaves
  • 2 tablespoons of black peppercorns

Steps
  1. Remove the brains, eyes and ears from the pig's head.
  2. Place the pig's head and feet in a large pot and cover with water.
  3. Add the garlic, onion, bay leaves and peppercorns to the pot.
  4. Bring to a boil, reduce heat to low and simmer for 2 hours.
  5. Remove from heat and let cool.
  6. Remove the meat from the bones and cut into cubes.
  7. Place in a bowl and mix with salt to taste.
  8. Transfer to a container or serving dish.
  9. Chill for at least 3 hours before serving.
