Halloumi & Waterm…
Ingredients
  • 4 ounces halloumi cheese
  • 1/2 large seedless watermelon, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons chopped fresh basil

Steps
  1. Heat a large skillet over medium-high heat.
  2. Add the halloumi cheese and cook for 2 minutes, flipping once.
  3. Remove the cheese from the pan and set aside.
  4. Add the watermelon cubes to the skillet and cook for 3 minutes, stirring occasionally.
  5. Add the olive oil, balsamic vinegar, and basil to the pan and stir to combine.
  6. Return the halloumi cheese to the pan and cook for 1 minute more.
  7. Serve warm with a drizzle of balsamic glaze.
