In a large bowl, combine the pork, garlic, ginger, green onion, soy sauce and sesame oil. Mix until fully combined.
Place 1 tablespoon of the pork mixture in the center of each gyoza wrapper. Fold the wrapper in half and press to seal.
Heat a large skillet over medium-high heat and add 1 tablespoon of oil. Place the dumplings in a single layer in the skillet and cook for 2 minutes or until golden brown on the bottom.
Add 1/4 cup of water to the skillet and cover with a lid. Cook for 5 minutes or until all of the water has evaporated.
