Gumbo
Ingredients
  • 2 tablespoons vegetable oil
  • 1/4 cup all-purpose flour
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme leaves
  • 1 bay leaf
  • 2 teaspoons Worcestershire sauce
  • 1 1/2 pounds skinless, boneless chicken thighs, cut into 1-inch cubes

Steps
  1. Heat oil in a large pot over medium heat. Add flour and cook, stirring constantly, until the mixture turns a dark brown color (this is the roux), about 10 minutes.
  2. Add onion, bell pepper, celery and garlic. Cook for 5 minutes.
  3. Stir in chicken broth and bring to a boil. Reduce heat to low and stir in thyme, bay leaf and Worcestershire sauce.
  4. Add chicken cubes and simmer for 15 minutes.
  5. Remove bay leaf before serving.
