- 2 zucchinis, sliced lengthwise
- 3 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- Preheat grill to medium-high heat.
- Brush zucchini slices with olive oil, then season with salt and pepper.
- Grill for 3-4 minutes per side, or until tender.
- Sprinkle Parmesan cheese over the top of each slice.
- Grill for an additional 1-2 minutes, or until cheese has melted.
- Serve warm.
