Grilled Zucchini …
Ingredients
  • 2 large zucchini, cut into 1/4-inch slices
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 4 ounces fresh mozzarella cheese, cut into 1/4-inch cubes
  • 1/4 cup balsamic vinegar

Steps
  1. Preheat the grill to medium-high heat.
  2. Brush the zucchini slices with olive oil and season with salt and pepper. Grill for 3-4 minutes per side or until lightly charred and tender.
  3. In a large bowl, combine the grilled zucchini, tomatoes, basil, mozzarella cheese and balsamic vinegar. Toss to combine.
  4. Serve immediately.
