- 2 large zucchini, cut into 1/4-inch slices
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves, chopped
- 4 ounces fresh mozzarella cheese, cut into 1/4-inch cubes
- 1/4 cup balsamic vinegar
- Preheat the grill to medium-high heat.
- Brush the zucchini slices with olive oil and season with salt and pepper. Grill for 3-4 minutes per side or until lightly charred and tender.
- In a large bowl, combine the grilled zucchini, tomatoes, basil, mozzarella cheese and balsamic vinegar. Toss to combine.
- Serve immediately.
