Grilled Zucchini …
Ingredients
  • 2 large zucchini, cut into 1/2-inch thick slices
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 ears of corn, husked and cut into 1-inch thick slices

Steps
  1. Preheat the grill to medium-high heat.
  2. Brush the zucchini and corn with the olive oil and season with garlic powder, salt and pepper.
  3. Grill the vegetables for 4-5 minutes per side or until they are lightly charred and tender.
  4. Remove from the grill and let cool.
  5. Cut the zucchini into cubes and cut the corn off of the cob.
  6. In a large bowl, combine the grilled vegetables with your favorite salad ingredients.
  7. Toss to combine.
