- 2 large zucchini, cut into 1/2-inch thick slices
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 ears of corn, husked and cut into 1-inch thick slices
- Preheat the grill to medium-high heat.
- Brush the zucchini and corn with the olive oil and season with garlic powder, salt and pepper.
- Grill the vegetables for 4-5 minutes per side or until they are lightly charred and tender.
- Remove from the grill and let cool.
- Cut the zucchini into cubes and cut the corn off of the cob.
- In a large bowl, combine the grilled vegetables with your favorite salad ingredients.
- Toss to combine.
