Ingredients
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 4 slices whole wheat bread
  • 4 slices provolone cheese

Steps
  1. Heat olive oil in a large skillet over medium heat. Add onion and bell peppers and cook for 5 minutes, stirring occasionally.
  2. Add garlic, oregano and basil. Cook for an additional 2 minutes.
  3. Season with salt and pepper to taste.
  4. Spread 1 tablespoon of olive oil on one side of each slice of bread. Place two slices of bread in the skillet, oil side down. Top each slice with a slice of cheese and the cooked vegetables.
  5. Top with remaining two slices of bread, oil side up. Cook until golden brown on each side.
  6. Serve hot.
