Ingredients
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced into thin strips
  • 1/2 onion, sliced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 3/4 cup corn kernels, cooked and cooled
  • 1 (15-ounce) can black beans, rinsed and drained
  • 8 (8-inch) whole wheat flour tortillas

Steps
  1. Heat the olive oil in a large skillet over medium-high heat. Add the bell pepper and onion and cook until the vegetables are softened, about 5 minutes. Stir in the chili powder, cumin, garlic powder, corn and black beans. Cook for an additional 2 minutes.
  2. Lay one tortilla on a work surface. Spread 1/3 cup of the vegetable mixture over half of the tortilla. Fold the other half of the tortilla over to cover the filling. Repeat with remaining tortillas and filling.
  3. Heat a large skillet over medium heat. Place one quesadilla in the skillet and cook until golden brown on both sides, about 4 minutes per side.
  4. Repeat with remaining quesadillas.
