Ingredients
  • 1 whole wheat pita pocket
  • 1/2 cup grilled vegetables (such as bell peppers, zucchini, and/or eggplant)
  • 1/4 cup chopped cucumber
  • 1 tablespoon crumbled feta cheese
  • 2 tablespoons hummus

Steps
  1. Heat a grill or grill pan to medium-high heat.
  2. Place the vegetables on the grill and cook for 3-4 minutes per side, or until lightly charred and tender.
  3. Remove from heat and set aside.
  4. Cut the pita in half, then stuff it with the grilled vegetables, cucumber, feta cheese, and hummus.
  5. Serve immediately.
