- 1 whole wheat pita pocket
- 1/2 cup grilled vegetables (such as bell peppers, zucchini, and/or eggplant)
- 1/4 cup chopped cucumber
- 1 tablespoon crumbled feta cheese
- 2 tablespoons hummus
- Heat a grill or grill pan to medium-high heat.
- Place the vegetables on the grill and cook for 3-4 minutes per side, or until lightly charred and tender.
- Remove from heat and set aside.
- Cut the pita in half, then stuff it with the grilled vegetables, cucumber, feta cheese, and hummus.
- Serve immediately.
