Ingredients
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large red bell pepper, cut into thin strips
  • 1 large yellow bell pepper, cut into thin strips
  • 1 small zucchini, cut into thin slices
  • 8 ounces sliced mushrooms (such as button or cremini)
  • 4 slices sourdough bread (or other sturdy bread)

Steps
  1. Heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute. Stir in oregano, red pepper flakes, salt and black pepper.
  2. Add bell peppers, zucchini and mushrooms to the skillet. Cook for 8-10 minutes until vegetables are tender.
  3. To assemble panini: Place one slice of bread on a clean work surface. Top with cooked vegetables, then top with another slice of bread.
  4. Heat a large skillet or panini press over medium heat. Place sandwich in the skillet and cook for 2-3 minutes per side until golden brown and cheese is melted.
  5. Repeat with remaining sandwiches. Serve warm.
