Ingredients
  • 1/2 red onion, sliced
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 eggplant, sliced
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste

Steps
  1. Preheat the grill to medium-high heat.
  2. Brush the vegetables with olive oil and season with salt and pepper.
  3. Grill the vegetables for 8-10 minutes, or until they are tender and lightly charred.
  4. Transfer the grilled vegetables to a large bowl and toss together.
  5. Serve warm or chilled.
