Ingredients
  • 2 bell peppers, cut into strips
  • 1 red onion, cut into wedges
  • 1 zucchini, sliced lengthwise
  • 1 eggplant, sliced lengthwise
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Steps
  1. Preheat the grill to medium-high heat.
  2. Toss the vegetables with olive oil and season with salt and pepper.
  3. Place the vegetables on the grill and cook until lightly charred and tender, about 8 minutes per side.
  4. Remove from the heat and serve.
