Ingredients
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil
  • 1 red bell pepper, seeded and sliced into strips
  • 1 yellow bell pepper, seeded and sliced into strips
  • 1 medium zucchini, sliced into strips
  • 8-inch flour tortillas

Steps
  1. In a small bowl, mix together garlic, cumin, chili powder, paprika and salt. Add in olive oil and stir to combine.
  2. Heat a large skillet over medium-high heat. Add bell peppers and zucchini to the skillet and cook for 5 minutes or until vegetables are tender.
  3. Remove vegetables from the skillet and set aside.
  4. Warm each tortilla in the skillet for about 30 seconds per side.
  5. Place 1/4 of the cooked vegetables onto each tortilla. Fold up the sides of the tortilla to form a wrap.
  6. Serve warm.
