- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 zucchini, cut into strips
- 1 onion, cut into strips
- 4 large whole wheat tortillas
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 tablespoons balsamic vinegar
- Preheat grill to medium-high heat.
- In a large bowl, combine peppers, zucchini and onion. Drizzle with olive oil and season with salt and pepper.
- Grill vegetables for 5-7 minutes until lightly charred and tender.
- Warm tortillas on the grill for 1 minute each side.
- Divide vegetables among the four tortillas. Drizzle with balsamic vinegar and wrap up.
- Serve immediately.
