Ingredients
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 zucchini, cut into strips
  • 1 onion, cut into strips
  • 4 large whole wheat tortillas
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons balsamic vinegar

Steps
  1. Preheat grill to medium-high heat.
  2. In a large bowl, combine peppers, zucchini and onion. Drizzle with olive oil and season with salt and pepper.
  3. Grill vegetables for 5-7 minutes until lightly charred and tender.
  4. Warm tortillas on the grill for 1 minute each side.
  5. Divide vegetables among the four tortillas. Drizzle with balsamic vinegar and wrap up.
  6. Serve immediately.
