Grilled Vegetable…
Ingredients
  • 1/2 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 zucchini, quartered and cut into 1 inch pieces
  • 2 yellow squash, quartered and cut into 1 inch pieces
  • 1 red onion, cut into wedges

Steps
  1. In a large bowl, mix together the olive oil, garlic, oregano, salt and pepper.
  2. Add the vegetables to the bowl and toss to coat.
  3. Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  4. Thread the vegetables onto skewers.
  5. Grill for 10 minutes or until lightly charred, turning occasionally.
