- 1/2 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 zucchini, quartered and cut into 1 inch pieces
- 2 yellow squash, quartered and cut into 1 inch pieces
- 1 red onion, cut into wedges
- In a large bowl, mix together the olive oil, garlic, oregano, salt and pepper.
- Add the vegetables to the bowl and toss to coat.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Thread the vegetables onto skewers.
- Grill for 10 minutes or until lightly charred, turning occasionally.
