Ingredients
  • 1/2 cup thinly sliced zucchini
  • 1/2 cup thinly sliced yellow squash
  • 1/2 cup thinly sliced red onion
  • 1/2 cup thinly sliced bell pepper
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper

Steps
  1. Preheat a grill to medium-high heat.
  2. In a medium bowl, combine the zucchini, yellow squash, red onion and bell pepper. Drizzle with the olive oil and season with salt and pepper.
  3. Grill the vegetables for 4 to 5 minutes, or until they are tender and lightly charred.
  4. Transfer the grilled vegetables to a serving bowl and serve.
