- 1/2 cup thinly sliced zucchini
- 1/2 cup thinly sliced yellow squash
- 1/2 cup thinly sliced red onion
- 1/2 cup thinly sliced bell pepper
- 1 tablespoon olive oil
- Salt and freshly ground black pepper
- Preheat a grill to medium-high heat.
- In a medium bowl, combine the zucchini, yellow squash, red onion and bell pepper. Drizzle with the olive oil and season with salt and pepper.
- Grill the vegetables for 4 to 5 minutes, or until they are tender and lightly charred.
- Transfer the grilled vegetables to a serving bowl and serve.
