Ingredients
  • 1 red onion, cut into wedges
  • 1 red pepper, cut into strips
  • 1 yellow pepper, cut into strips
  • 2 courgettes, sliced diagonally
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 100g feta cheese, crumbled

Steps
  1. Preheat the grill to high heat.
  2. Toss the vegetables in the olive oil and season with salt and pepper.
  3. Place the vegetables on a baking tray and cook under the grill for 8-10 minutes until softened and lightly charred.
  4. Transfer to a bowl and add feta cheese.
  5. Serve warm or cold.
