- 1 red onion, cut into wedges
- 1 red pepper, cut into strips
- 1 yellow pepper, cut into strips
- 2 courgettes, sliced diagonally
- 2 tablespoons olive oil
- Salt and freshly ground black pepper
- 100g feta cheese, crumbled
- Preheat the grill to high heat.
- Toss the vegetables in the olive oil and season with salt and pepper.
- Place the vegetables on a baking tray and cook under the grill for 8-10 minutes until softened and lightly charred.
- Transfer to a bowl and add feta cheese.
- Serve warm or cold.
