- 1/2 red onion, thinly sliced
- 1 zucchini, cut into 1/2-inch thick slices
- 1 yellow squash, cut into 1/2-inch thick slices
- 1 red bell pepper, cut into 1-inch pieces
- 1 orange bell pepper, cut into 1-inch pieces
- 3 tablespoons olive oil
- Salt and freshly ground black pepper to taste
- 4 cups mixed greens of your choice (such as arugula, spinach or romaine)
- 3 tablespoons balsamic vinaigrette
- Preheat the grill to medium heat. Brush the vegetables with the olive oil and season with salt and pepper.
- Place the vegetables on the grill and cook for 5 minutes per side or until they are lightly charred and tender.
- In a large bowl, combine the grilled vegetables with the mixed greens.
