Grilled Vegetableā€¦
Ingredients
  • 1/2 red onion, thinly sliced
  • 1 zucchini, cut into 1/2-inch thick slices
  • 1 yellow squash, cut into 1/2-inch thick slices
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 orange bell pepper, cut into 1-inch pieces
  • 3 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • 4 cups mixed greens of your choice (such as arugula, spinach or romaine)
  • 3 tablespoons balsamic vinaigrette

Steps
  1. Preheat the grill to medium heat. Brush the vegetables with the olive oil and season with salt and pepper.
  2. Place the vegetables on the grill and cook for 5 minutes per side or until they are lightly charred and tender.
  3. In a large bowl, combine the grilled vegetables with the mixed greens.
  4. Drizzle with balsamic vinaigrette and toss to combine. Serve immediately.
