- 1 red onion, cut into wedges
- 1 red pepper, cut into chunks
- 1 yellow pepper, cut into chunks
- 2 zucchinis, cut into slices
- 2 tablespoons olive oil
- Salt and freshly ground black pepper
- Preheat a grill to medium heat.
- In a large bowl, combine the onion wedges, red and yellow peppers, and zucchini slices. Drizzle with olive oil and season with salt and pepper.
- Thread the vegetables onto 8 metal or wooden skewers.
- Grill the kebabs for 15 minutes or until tender-crisp, turning occasionally.
- Serve warm.
