Ingredients
  • 1 red onion, cut into wedges
  • 1 red pepper, cut into chunks
  • 1 yellow pepper, cut into chunks
  • 2 zucchinis, cut into slices
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper

Steps
  1. Preheat a grill to medium heat.
  2. In a large bowl, combine the onion wedges, red and yellow peppers, and zucchini slices. Drizzle with olive oil and season with salt and pepper.
  3. Thread the vegetables onto 8 metal or wooden skewers.
  4. Grill the kebabs for 15 minutes or until tender-crisp, turning occasionally.
  5. Serve warm.
