Ingredients
  • 1 red onion, cut into 1-inch pieces
  • 1 bell pepper, cut into 1-inch pieces
  • 1 zucchini, cut into 1-inch slices
  • 1 yellow squash, cut into 1-inch slices
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Steps
  1. Preheat a grill to medium heat.
  2. In a large bowl, combine the onion, bell pepper, zucchini, and yellow squash. Drizzle with olive oil and balsamic vinegar. Sprinkle with garlic powder and season with salt and pepper.
  3. Thread the vegetables onto skewers and place them on the preheated grill. Grill for 10 minutes or until vegetables are tender.
  4. Serve kabobs warm.
