- 4 large tomatoes
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 2 ripe avocados, halved and pitted
- 1/4 cup freshly squeezed lime juice
- Preheat the grill to medium-high heat.
- Cut the tomatoes into thick slices and place in a shallow dish.
- In a separate bowl, mix together the olive oil, garlic powder, and pepper.
- Brush the tomato slices with the oil mixture on both sides.
- Place the tomato slices on the preheated grill and cook for 4 minutes per side.
- Remove from heat and set aside to cool.
- Cut the avocado halves into thin slices and place in a bowl.
- Drizzle with lime juice and toss to coat.
