Grilled Sweet Pot…
Ingredients
  • 2 large sweet potatoes, cut into 1/2-inch thick slices
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper, to taste
  • 3 tablespoons freshly chopped parsley
  • 1/4 cup crumbled feta cheese

Steps
  1. Preheat the grill to medium-high heat. Grease the grates with oil.
  2. Place the sweet potato slices on the hot grill. Grill for 8-10 minutes, flipping once halfway through, until lightly charred and tender.
  3. In a small bowl, whisk together olive oil, garlic powder, smoked paprika, cayenne pepper, salt and pepper. Brush the sweet potatoes with the spiced oil.
  4. Remove from the grill and transfer to a serving platter. Sprinkle with parsley and feta cheese. Serve warm or at room temperature.
