Ingredients
  • 1 zucchini, cut into 1/4-inch thick slices
  • 1 yellow squash, cut into 1/4-inch thick slices
  • 2 bell peppers, cut into 1/2-inch thick slices
  • 1 red onion, cut into 1/4-inch thick slices
  • 2 ears of corn, husked and halved crosswise
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Steps
  1. Preheat a grill to medium heat (350°F to 450°F).
  2. In a large bowl, combine the zucchini, yellow squash, bell peppers, red onion and corn. Drizzle with the olive oil and season with the salt and pepper.
  3. Toss to combine and then transfer the vegetables to the grill.
  4. Cook for 8 to 10 minutes, or until the vegetables are tender and lightly charred.
  5. Transfer the grilled vegetables back to the bowl and toss with your favorite vinaigrette.
  6. Serve warm or at room temperature.
