- 1 lb. shrimp, peeled and deveined
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Salt and pepper, to taste
- 2 mangos, diced
- 1/4 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- Preheat the grill to medium-high heat.
- In a medium bowl, combine the olive oil, lime juice, chili powder, salt and pepper.
- Add the shrimp and toss to coat.
- Thread the shrimp onto skewers and grill for 4-5 minutes or until cooked through.
- In a small bowl, combine the mangoes, red onion and cilantro.
- Serve the shrimp skewers with the mango salsa.
