Ingredients
  • 1 lb. shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 2 mangos, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped

Steps
  1. Preheat the grill to medium-high heat.
  2. In a medium bowl, combine the olive oil, lime juice, chili powder, salt and pepper.
  3. Add the shrimp and toss to coat.
  4. Thread the shrimp onto skewers and grill for 4-5 minutes or until cooked through.
  5. In a small bowl, combine the mangoes, red onion and cilantro.
  6. Serve the shrimp skewers with the mango salsa.
