- 1 lb. shrimp, peeled and deveined
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 mango, diced
- 1/4 cup red onion, diced
- 1 jalapeno, seeded and diced
- 2 tablespoons cilantro, chopped
- 2 tablespoons lime juice
- Preheat grill to medium heat.
- Toss shrimp with olive oil and season with salt and pepper.
- Grill shrimp for 2-3 minutes per side or until cooked through.
- In a medium bowl combine mango, red onion, jalapeno, cilantro and lime juice. Stir to combine.
- Serve grilled shrimp with mango salsa.
