- 1 lb. salmon fillet
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- salt and pepper to taste
- For the Mango Salsa:
- 2 mangoes, diced
- 1/4 cup red onion, diced
- 1 jalapeno, seeded and minced
- In a medium bowl, combine the olive oil, lime juice, garlic powder, cumin, salt and pepper. Mix well.
- Place the salmon in a shallow dish and pour the marinade over it. Turn to coat and let marinate for 1 hour in the refrigerator.
- Preheat an outdoor grill or indoor grill pan to medium-high heat.
- Remove the salmon from the marinade and place on the preheated grill. Cook for 4-5 minutes per side or until desired doneness is reached.
- For the Mango Salsa: Combine all ingredients in a medium bowl and mix well.
- Serve alongside grilled salmon.
