Ingredients
  • 1 lb. salmon fillet
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • salt and pepper to taste
  • For the Mango Salsa:
  • 2 mangoes, diced
  • 1/4 cup red onion, diced
  • 1 jalapeno, seeded and minced

Steps
  1. In a medium bowl, combine the olive oil, lime juice, garlic powder, cumin, salt and pepper. Mix well.
  2. Place the salmon in a shallow dish and pour the marinade over it. Turn to coat and let marinate for 1 hour in the refrigerator.
  3. Preheat an outdoor grill or indoor grill pan to medium-high heat.
  4. Remove the salmon from the marinade and place on the preheated grill. Cook for 4-5 minutes per side or until desired doneness is reached.
  5. For the Mango Salsa: Combine all ingredients in a medium bowl and mix well.
  6. Serve alongside grilled salmon.
