Ingredients
  • 4 (6-ounce) salmon fillets
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 3 tablespoons freshly squeezed lime juice, divided
  • 1 large avocado, diced
  • 1/2 cup diced tomatoes
  • 2 tablespoons chopped fresh cilantro leaves

Steps
  1. Preheat a grill to medium-high heat. Season the salmon with salt and pepper. Brush the salmon with olive oil and 1 tablespoon of lime juice. Grill for 4 minutes per side, or until cooked through.
  2. In a small bowl, combine the avocado, tomatoes, cilantro, remaining 2 tablespoons of lime juice and a pinch of salt. Serve the salmon topped with the avocado salsa.
  3. Enjoy!
