- 4 salmon fillets
- 1 mango, diced
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- Preheat the grill to medium heat.
- In a bowl, combine the mango, red onion, cilantro, lime juice, olive oil and salt and pepper.
- Brush the salmon with olive oil and season with salt and pepper.
- Grill the salmon for 4-5 minutes per side or until cooked through.
- Top with mango salsa and serve.
