- 2 6-ounce salmon fillets
- 2 tablespoons extra-virgin olive oil
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 3 cups baby spinach leaves
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted and halved
- 1/4 cup chopped fresh mint leaves
- 1/4 cup crumbled feta cheese
- Preheat a grill to medium-high heat.
- Brush the salmon with the olive oil and season with salt and pepper.
- Grill the salmon for 4 minutes per side or until cooked through.
- In a large bowl, combine the spinach, tomatoes, olives, mint and feta cheese.
- Toss to combine. Divide the salad among two plates and top each with a piece of grilled salmon.
