Ingredients
  • 2 6-ounce salmon fillets
  • 2 tablespoons extra-virgin olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 cups baby spinach leaves
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, pitted and halved
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup crumbled feta cheese

Steps
  1. Preheat a grill to medium-high heat.
  2. Brush the salmon with the olive oil and season with salt and pepper.
  3. Grill the salmon for 4 minutes per side or until cooked through.
  4. In a large bowl, combine the spinach, tomatoes, olives, mint and feta cheese.
  5. Toss to combine. Divide the salad among two plates and top each with a piece of grilled salmon.
