Ingredients
  • 4 salmon fillets
  • 1/4 cup olive oil
  • 1 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 heads romaine lettuce, washed and chopped
  • 3 tablespoons freshly squeezed lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 2 cloves garlic, minced
  • 2 anchovy fillets, minced (optional)

Steps
  1. Preheat the grill to medium-high heat.
  2. Brush the salmon fillets with olive oil and season with salt and pepper.
  3. Place the salmon on the preheated grill and cook for 4 minutes per side or until cooked through.
  4. Remove from the grill and set aside to cool.
  5. In a large bowl, combine the lettuce, lemon juice, extra-virgin olive oil, garlic, anchovies (if using), and salt and pepper to taste.
  6. Toss to combine.
  7. Divide the salad among four plates. Top each plate with a grilled salmon fillet.
  8. Serve immediately.
