- 2 salmon fillets
- 1/4 cup breadcrumbs
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- salt and pepper to taste
- Preheat an outdoor grill for medium-high heat.
- In a medium bowl, mix together the breadcrumbs, mayonnaise, Dijon mustard, lemon juice, olive oil, salt and pepper.
- Cut the salmon into small cubes, and add to the bowl. Mix until all ingredients are evenly distributed.
- Form the mixture into 4 patties.
- Lightly oil the grill grate. Grill patties for 5 minutes on each side or until cooked through.
