Grilled Ratatouil…
Ingredients
  • 2 large eggplant, cut into 1/2-inch slices
  • 2 red bell peppers, cut into strips
  • 1 large onion, cut into thin wedges
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Steps
  1. Preheat an outdoor grill for high heat and lightly oil the grate.
  2. In a large bowl, combine the eggplant, bell peppers and onion. Drizzle with the olive oil and season with garlic, oregano, basil, salt and pepper.
  3. Grill the vegetables on preheated grill until tender and lightly charred on both sides.
  4. Arrange the grilled vegetables on a platter or individual plates. Serve warm or at room temperature.
