Grilled Ratatouil…
Ingredients
  • 1 large eggplant, cut into 1/2-inch cubes
  • 2 large zucchini, cut into 1/2-inch cubes
  • 1 large red bell pepper, cut into 1/2-inch cubes
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and freshly ground black pepper to taste

Steps
  1. Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  2. In a large bowl, mix together the eggplant, zucchini, bell pepper, onion, garlic, olive oil, oregano and basil. Season with salt and pepper to taste.
  3. Grill the vegetables in batches until lightly charred and tender. Serve warm.
