Ingredients
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground black pepper
  • 3 pounds pork shoulder roast, trimmed of fat and cut into 4 pieces
  • 3/4 cup apple cider vinegar
  • 1/4 cup dark brown sugar

Steps
  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the smoked paprika, cumin, chili powder, and black pepper and stir to combine.
  2. Place the pork shoulder pieces in a slow cooker. Pour the vinegar over the pork and sprinkle with brown sugar. Cover and cook on low for 8 hours.
  3. Once cooked through, use two forks to shred the pork into small pieces.
  4. Preheat an outdoor grill to medium-high heat. Grill the shredded pork for 8 minutes or until lightly charred.
  5. Serve on hamburger buns with your favorite toppings.
