- 2 large portobello mushrooms
- 2 tablespoons olive oil
- 1/4 teaspoon garlic powder
- Salt and freshly ground black pepper
- 4 slices of your favorite bread
- 1/4 cup mayonnaise
- 1/2 cup shredded lettuce
- 2 tablespoons diced red onion
- Preheat grill to medium-high heat.
- Brush the mushrooms with the olive oil, garlic powder, salt and pepper. Grill for 4 minutes on each side until slightly charred and tender.
- Spread mayonnaise on one side of each slice of bread. Layer with the mushrooms, lettuce and red onion. Top with remaining slices of bread.
- Grill sandwiches for 2 minutes on each side until golden brown and cheese is melted.
