- 2 large peaches, halved and pitted
- 1/4 cup extra-virgin olive oil
- 1 teaspoon garlic powder
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons balsamic vinegar
- 2 cups cherry tomatoes, halved
- Preheat grill to medium-high heat.
- Brush peaches with olive oil, garlic powder, salt and pepper.
- Place peaches on the grill, cut side down. Grill for 3-4 minutes or until lightly charred.
- Remove from the heat and let cool before slicing.
- In a large bowl, combine grilled peaches, tomatoes, balsamic vinegar and remaining olive oil. Toss to combine.
- Season with salt and pepper to taste.
- Serve immediately.
