Ingredients
  • 4 ripe peaches, halved and pitted
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and freshly ground black pepper
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh basil

Steps
  1. Preheat a grill to medium-high heat.
  2. Brush the peach halves with the olive oil, then place them on the hot grill. Grill for 3-4 minutes per side, until lightly charred and just beginning to soften.
  3. Transfer the grilled peaches to a large bowl. Drizzle with the balsamic vinegar and season with salt and pepper, to taste.
  4. Top with feta cheese and chopped basil. Serve immediately.
