Ingredients
  • 4 ears of corn, grilled
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 3 tablespoons freshly squeezed lime juice (2 limes)
  • 1/4 cup chopped cilantro leaves
  • 1/4 cup crumbled queso fresco or feta cheese

Steps
  1. 1. Preheat grill to medium-high heat.
  2. 2. Grill the corn for 8-10 minutes, turning every few minutes, until lightly charred and cooked through.
  3. 3. Let cool slightly before cutting the kernels off the cob.
  4. 4. In a small bowl, whisk together the mayonnaise, sour cream, garlic powder, chili powder and lime juice.
  5. 5. Pour over the grilled corn in a large bowl and toss to combine.
  6. 6. Add in the cilantro and cheese and toss again until everything is evenly coated.
  7. 7. Serve warm or chilled.
