- 1 lb. boneless lamb, cut into 1-inch cubes
- 2 red onions, cut into wedges
- 2 green peppers, cut into chunks
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 tsp. dried oregano
- 1 tsp. ground cumin
- In a large bowl, combine the lamb cubes, onion wedges, green pepper chunks, olive oil, garlic, oregano and cumin.
- Toss to coat the ingredients with the marinade.
- Thread the lamb cubes and vegetables onto skewers.
- Grill over medium-high heat for 8-10 minutes or until the lamb is cooked through.
- Serve hot.
